Chicken Cacciatore

Chicken Cacciatore

4 chicken quarters ( I use 8 thighs instead)
1 tbsp olive oil
2 large onions peeled and sliced
500g chopped tinned tomatoes
2 cloves garlic...crushed
1 tbsp tomato puree
1 tbsp rosemary
1 tbsp thyme
1 bay leaf
1 red bell pepper - finely sliced
280 mls dry white wine
1 tbsp white wine vinegar
150 mls chicken stock
1 chilli - finely chopped
salt and pepper to taste

Fry the chicken in the oil until the skin is brown.
Remove the skin and put chicken to one side
Fry onions in the chicken fat until transparent but not brown
Add the remaining ingredients and return the chicken to the pan
Bring to the boil then reduce heat and simmer. Cook till fairly thick and chicken is tender
serve with rice / pasta / or roast potatoes
Garlic bread on the side....
