Ginger Lime and Lemon Marmalade
Ginger Lime and Lemon Marmalade
Ingredients
3 to 4 limes
2 to 4 lemons
1 piece root ginger 5" to 6" long ( use your discretion as ginger is obviously very uneven in size)
5 cups water
4 and quarter cups granulated sugar
Method
1. Cut limes in half lengthwise, then slice crossways about 1/8" thick...you will need about one and half cups fruit
2. Zest lemons
3. Scrape then finely shred ginger
4. Put lime slices, half cup lemon zest,quarter cup ginger and the water into a 5 to 6 quart pan
5. Bring to boil over medium heat and boil rapidly until fruit is tender - about 30 minutes
6. Remove from heat
7. Measure the hot lime and ginger mixture and allow 1 cup of sugar to 1 cup of fruit mix
8. Stir gently until sugar is dissolved then bring back to boil and cook for approximately 30 minutes
It should slide off the spoon in an uniform sheet if it is ready - 220F on sugar thermometer... or test in your usual way...Remember to remove from heat when testing for set. Skim off any foam then pot up in clean dry hot jars...
