Quick Grapefruit Marmalade
This recipe makes one or two pots depending on the size of your jars....
Grapefruit for a change but play with it... use other citrus fruits or increase the quantities and make a mixed fruit marmalade...
Ingredients
1 large pink grapefruit ( or 2/3 oranges depending on size)
3 cups sugar
6 cups water
2 tablespoons lemon juice
Directions
1 Peel the grapefruit very very thinly with a potato peeler and shred the peel.. Keep all the juice that flows out.
2. Do the same with the lemon and save the juice
3. Remove pith ... tie the pith and any seeds in a muslin cloth
4. Chop the grapefruit ( or orange) flesh into very fine pieces
5. Bring 6 cups of water to a boil, and then add the grapefruit pieces and juice and the muslin containing the pith and seeds
6. Keep at a low boil, adding the sugar and stirring till dissolved... Continue boiling for about 20-30 minutes.. until it begins getting thicker.
7. Remember it will thicken as it cools.... test as you would for any fruit jam...take off the heat and put a little onto a chilled saucer...Leave for a few seconds to cool...push with finger.... if it wrinkles its ready to pot...
