Parsnip Ginger and Honey Soup

Parsnip Ginger and Honey Soup

Ingredients :-

1 large or two medium onions - chopped
3 good sized parsnips - peeled and chopped
Chunk of root ginger - peeled and thinly sliced
Pinch of crushed/flaked dried chillies
1 and 3/4 litres stock - chicken or vegetable according to taste - stock cubes are ok
A heaped dessertspoonful of set honey
A little double cream
salt and pepper - but do not season till the end...

Method :-

Sweat the onions in a little butter till transparent....Add the parsnips, ginger, stock and chillies....Bring to the boil then simmer till tender....
Blend till smooth - if its too thick add a little water or milk
Stir in the honey and cream and season to taste

This is not an exact recipe...you might want to add more / less honey or cream ...just play with it till it suits your taste buds Very Happy
