Chicken Jalfrezi

Chicken Jalfrezi ~ serves 4


2 tbsps vegetable oil
1 onion, grated
2 cloves garlic - chopped
3 tsp ground tumeric
1 tsp chilli powder
1/2 tsp salt
400g tin chopped tomatoes
2 tbsp ghee - clarified butter
3 tsp ground cumin
3 tsp ground coriander
2 tbsps grated fresh root ginger
25g chopped fresh coriander
680 g boneless, skinless chicken thighs, cut in half


Heat the oil in a large deep frying pan over medium-high heat.
Add onions and garlic and cook for about 2 minutes
Add the chicken, and season with the turmeric, chilli powder and salt.
Fry gently, scraping the bottom of the pan frequently and turning the chicken
Pour in the tomatoes complete with juice
Cover the pan and simmer for for about 20 minutes
Uncover pan and simmer for another 10 minutes to let excess liquid evaporate
Add ghee,cumin,ground coriander, ginger and fresh coriander
Simmer for another 5 to 7 minutes
Spoon the sauce over the chicken and serve with rice or Nan bread
