Jimjam's Red Pepper and Tomato soup

About 8 to 10 big tomatoes
2 onions
2 red peppers
loads black pepper, less salt
1 1/2 pints of chicken stock
3 ozs butter


1. Boil kettle and put your toms in a big bowl for 5 mins ( so you can peel skins off easily)

2. Chop toms up smallish and then chop onions plus peppers.

3. Melt butter in a thick based saucepan, now add all the veg, coat the veg with your melted butter by giving a good stir around.

4. Put your lid on your pan and put on a low heat (your little burner) and let them steam themselves off to soften (about 10 mins)

5. Now add your stock and black pepper and your salt.Lid back on and simmer for about 20 mins.

7. Blitz it down with a stick blender. Booootiful.

This soup is everyones favourite. I`ve lost count of how many batches I`ve made. Make it the day before required and it will taste even better.

This soup can be frozen for future use too
