Jimjam's Chocolate Fondants

Chocolate fondants

Chocolate fondant with home-made vanilla ice-cream
( Don`t eat these of you`re on a diet Laughing )


50g melted butter for brushing your pudding moulds

cocoa powder for dusting

200g good quality chocolate

200g butter, diced

200g golden castor sugar

4 eggs plus 4 egg yolks

200g plain flour

9 individual pudding moulds


Heat oven to 200C

1 Using upward strokes brush melted butter all over the inside of your pudding moulds, put in the fridge , remove from fridge & repeat with butter then add a tsp cocoa powder to the mould and swirl around until the inside is covered.

2 Melt the butter & chocolate over a pan of barely simmering water, stir then leave to cool for 10 mins

3 Meanwhile mix the eggs and the yolks plus the sugar together until thick & pale, the mixture should leave a ribbon trail. Sift the flour into the egg mix and beat well.

4 Pour the cooled melted chocolate into the egg mix in thirds, beating well

5 Tip the fondant mix into a jug and pour into your individual pudding moulds. At this stage the fondants can be frozen.

6 Chill your fondants for 20 mins in the fridge then place on a baking tray & cook for 10-12 mins. until the tops form a crust and come away from the sides. Add 5 mins if cooking from frozen

7 Remove from the oven & leave to sit for 1 min before turning out onto the plate

Serve with home-made vanilla ice-cream, and a dusting of icing sugar

(you can use bought icecream...............I use Lidls vanilla sometimes)
