Steak and ale pie

Steak and ale Pie

1kg braising steak
2 large onions , roughly chopped
4 large carrots , chopped into large chunks
2 tsp golden caster sugar
4 tbsp plain flour
300ml dark ale
2 beef stock cubes mixed with 400ml boiling water
small bunch each thyme , bay leaf and parsley, tied together
200g smoked bacon lardons, or chopped rashers


Method


brown meat, add onions and carrot, lightly fry without browning them, add flour, bung everything else in and cook slowly either in pan or cooker for a couple of hours nice and slow, then remove herbs and put pastry lid on!

For

Beef in Guinness

Same as above but with Guinness instead of beer, a little bit of orange zest and juice of half an orange.
