Sevin's Roasted Beetroot
It's scrummy and really simple.
Just wash the beetroot, trim off the leaves and cut in half. place cut side up on an oven dish and sprinkle with olive oil, a largish splash of rasberry vinegar and a good grind of black pepper.
Shove the dish in a medium heat oven for around 45 minutes or until the beetroot is soft and almost caramelised on the top.

I've tried other vinegars but I find the raspberry gives the beetroot a lovely fruity tang that compliments it's earthy sweetness.
