Gingerbread Muffins Empty Gingerbread Muffins

Gingerbread Muffins

Preheat oven to 200 C
Prepare 6 hole muffin tin


Ingredients

125 g softened butter
Half cup dark brown sugar
1 cup SR flour
2 eggs
quarter cup milk
1 tablespoon Vanilla Extract
1 tablespoon Mixed Spice
1 tablespoon Ground Cinnamon
1 tablespoon Ground Ginger
Pinch of salt

Method

Place butter, sugar, vanilla and salt in a large bowl and beat until light and fluffy.
Add the eggs and spices and beat for 1 minute.
Add flour and milk and beat until well combined
Spoon into the muffin cases until two thirds full.... sprinkle a little extra cinnamon on top if liked...
Bake for about 15 minutes....

Cool then dust with icing sugar.......Put the kettle on for tea !!! Very Happy
