This is cooked in a tin and sliced....You could also mould it around skewers or make into balls and skewer....if you do this remember to soak the skewers in cold water for an hour beforehand.....and wet your hands when working with the meat

Authentic Turkish Doner Kebab


500g Minced Lamb
1 Teaspoon Dried Oregano
1 Teaspoon Plain Flour
1/2 Teaspoon Dried Italian Herbs
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/4 Teaspoon Cayenne Chilli Pepper Powder
1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper
Pitta bread


1 Preheat oven to 180c/350f/Gas Mark 4

2 In a large bowl, combine flour, oregano, Italian herbs, garlic powder, onion powder, cayenne pepper, salt & black pepper.

3 Add the minced lamb & thoroughly mix through all dry ingredients, using a kneading method for around 3 minutes will ensure the lamb is smooth & all dry ingredients are evenly combined.

4 Shape the seasoned minced lamb & place into a loaf tin & place on a baking tray.

5 Bake in the oven for around 1hour 20 minutes & turn the loaf half way through cooking time & ensure even browning.

6 Once cooked, wrap kebab meat in foil & allow to rest for 10 minutes. Slice the doner kebab meat as thinly as possible & serve with warmed pitta bread & salad

Serve with warmed (lightly toasted) pitta bread. Chilli sauce & a salad of shredded cabbage, carrot, onion & sliced cucumber.

Freezing tip
Great to make in advance, slice & freeze .
