Salmon with tomato, cucumber and basil
Fish en papillote - Salmon with tomato & basil
Pre - heat Oven 220c or Gas 7 serves 1
Ingredients
125g Salmon fillet (skin off)
4 - 6 Slices of Tomatoes
3 - 4 Basil leaves
6 Thin slices of cucumber
2 Pinches of sugar
10g Butter
Method
Place the tomatoes on the square of baking sheet or foil and season with salt, pepper and a pinch of sugar.
Add the basil leaves followed by the cucumber.
Place the salmon fillet on top followed by the butter.
Season again with salt, pepper and a pinch of sugar.
Fold the parcel to form a parcel, place on a baking sheet in the oven for 12 - 14 minutes or until the salmon is just opaque all the way through.
