Pickled Onions

PICKLED ONIONS


1....Remove any loose skins from onions but DO NOT peel.
2....Cover with brine and leave overnight - but no longer than 24 hours
3....Drain off the brine and peel onions ~ wear gloves because the skins will stain your hands
4....Cover the peeled onions with a fresh solution of brine and again leave overnight but no longer than 24 hours
5....Drain off the brine and rinse the onions but do not soak
6....Pack into jars and cover with spiced vinegar ( recipe on the forum)

Store in a cool dark place for about 3 months - if you can keep your hands off them !!!

BRINE - 2 ounces of salt to 1 pint of water
